I am so excited to tell you all about the Good Food at Home series provided to me by Sellers Publishing. The books given to me to review included; Leftover Makeovers: Great New Meals from Last Night’s Dinner by Victoria Shearer, Make-Ahead Meals by Victoria Shearer, Quick Cheap Comfort Food by Victoria Shearer, Slow Cooker Classics by Victoria Shearer and Weeknight Desserts: Quick & Easy Sweet Treats by Beatrice Ojakangas.

I was really surprise how easy it was to make some of the meals in these books. I had a hard time deciding what to make and where to start. I was given five books to choose from. Here is what we decided to make.  We decided to go with the Giant Baked Burrito from Leftover Makeovers: Great New Meals from Last Night’s Dinner and it was delicious!
The recipe included the core recipe Mexican Shredded Chicken which you could make the Giant Baked Burrito and Enchiladas Verde. The Giant Baked Burrito includes 4 large flour tortillas, 1 cup medium-spiced black bean dip like H.T. Trader’s, 1/2 cup chopped sweet onions, 3 cups of of leftover Mexican Shredded Chicken, 1 pacage shredded taco cheese, 2 tomatoes, (if desired) add 1 cup guacamole, 1 cup sour cream, 1 cup fresh salsa, and 2 cups shredded lettuce. Form a big buritto of the four tortillas and put it all together and bake in the oven for about 18 mins or when it starts to brown. Cut it in slices with a pizza cutter and thats it. Simple and easy and best of all pretty quick.

I really enjoyed that with a core recipe it gave me all the options available to make for the next days and helps with meal planning. I had just about everything on hand so there was no stopping by the store to pick up any ingredients. It is amazing how fast a meal can be made when you have the main part finished and cooked. We made the Giant Baked Burrito and I enjoyed that I didn’t need a tortilla for each person but only needed 4 to feed myself and kids and still had a little left over. We added a basic Spanish rice to go along with it.

My favorite part was the dessert we decided to make. We made Chocolate Quesadillas from the Weeknight Desserts: Quick & Easy Sweet Treats. It was really simple and a huge hit for my kids.
